Quick strawberry tart

Summer and strawberries – for me an unseparable couple.
Sweet, red and fresh from the fridge the best summer snack there is…
Therefore I have to try out all recipes with strawberries that I come across…
Today I tried this one and I have to share it with you!
It is easy, super quick and heel lekker as the Dutch say.

You will need:

tart form (26cm)
1 shortcrust pastry (bought or quickly made yourself)
50g + 5 Tablespoons sugar
500g Mascarpone
750g Strawberries
juice from 1 lemon
100ml fresh orange/ strawberry juice

Now:
Preheat the oven to 180C and roll out the pastry in the greased tart form.
Bake for 20 min. and leave to cool.
Mix the mascarpone with the 50g of sugar and lemon juice.
Take a small saucepan and pour the 5 tablespoons of sugar and 100ml of juice. Heat over medium heat until the sugar dissolves and it becomes thick – a bit like syrup. Set aside to cool.
Now spread the mascarpone over the pastry, wash and halve the strawberries and place them on top of the mascarpone.
At the end spoon the juice over the strawberries and place in the fridge for at least 1h.
