My birthday cake {chocolate fudge cake}


As you know it was my birthday last week end. And I ordered one of my favourite chocolate cakes. So hubby and daughter were standing in the kitchen, stirring, cooking, baking… and having lots of fun.
I want to share the recipe with you but be careful this cake is addictive!

{Chocolate fudge cake}
You need:
240g unsalted butter, cut into small cubes
265g dark chocolate with 52% cocoa
95g dark chocolate with 70% cocoa
all cut into small pieces
290g brown sugar
4 tbsp water
5 large eggs, seperated
pinch of salt
20cm springform tin
Preheat oven to 170C

1. Line the tin with baking parchment.
2. Place the butter and ALL chocolate in a very large saucepan.
3. Put the sugar and water in a small saucepan, stir and bring to boil.
4. Pour the sugar mix over the chocolate, stir until melted.
5. Stir in the egg yolks, one at a time.
6. Set aside until the mixture reached room temperature.
7. Put the egg whites and salt in a bowl and whisk to firm. Gently fold the whites into the chocolate mixture.
8. Pour two-thirds of the mixture in the tin. Leave the rest for later!!!
9. Bake for 40 min. Take out and leave to cool completely.
10. Now pour the rest of the mixture on top of the cooled cake and return to the oven foer 20-25 min.
The cake should have moist crumbs when checked with a skewer.
Leave to cool IN the tin.
