Arepas {a recipe}

Do you remember this yummy breakfast? There were quite a few of you who asked for the arepas recipe, lucky you, Giova was so kind and put it together in a post, here we go:

Hi everyone, I’m Giova from One Bunting Away and was part of the Breakfast International #34. Since some of you asked for the recipe for the “arepas” and here it is!

The ingredients are:
180 grams of pre-cooked white corn meal (harina P.A.N) sold in all latin stores
200 ml hot water (as hot as you tolerate it, you will be mixing by hand)
150gr of feta cheese (crumbled) the one cheese we’ve found that actually makes tasty arepas
Salt 1 teaspoon (optional the feta is already salty)
and butter for the pan so they don’t stick to it and get that crunchy crust

Takes around 15 minutes to make
With this quantity you make up to 8 arepas, you can double the quantities and store the precooked arepas in the fridge.

Mix the cheese with the flour and salt, then add the water by pouring in batches.
Kneading along and feeling the consistency. Moist but not sticking to your hands.
Fill your sink with very hot water and put the bowl with the dough in it (this is so the dough doesn’t dry out while you are making the arepas).

We always cut a piece of plastic so the dough doesn’t stick to the counter.
Make a ball of dough, then flatten it using your hands (more like patting it) then grab a small round plate to cut it with (we use a baby bowl) and on the heated pan put some butter and place the arepa on top.

It is very important to place the arepas on a wired rack if you are going to store them!
